“Le Conche” Manzoni Bianco unfiltered – Salatin Winery

From Salatin, at the foot of the Treviso Pre-Alps, a wine resulting from the research of the perfect synergy between grape variety and micro-territory

Purpose

Le Conche, the toponym of a hilly complex of a few hectares located on the slopes of the Pre-Alps in the high Treviso Area, takes its name from the particular conformation of the hills with moderate altitude but high slopes. The significant daily temperature excursion of the summer months has always made this area suitable for the ripening of white grapes: on these slopes close to Conegliano,  Salatin cultivates the native variety Incrocio Manzoni 6.0.13.

The interpretation of a territory goes through the ability to understand also climate changes to which is subject, element that greatly influence the phase shift of the sugar and aromatic ripening periods. To ensure their balance, it is strategical to adopt agronomical choices, especially as regards the green management of this variety, and vinification choices.  The goal is to keep in its more integral form every little expression given by Le Conche territory to grapes and then to wine.

Project

Our path duly started from the vineyard, where all the agronomic techniques and interventions were studied and fine-tuned, from pruning to green operations in the pre-harvest period, necessary to ensure the vegetative-productive balance of the plant. The vineyard has been capable of giving grapes properly ripen and balanced in their composition, preserving those characteristics of the fruit that are often compromised in hot and dry vintages. The vinification, at that point, had the only objective of preserving what the vine has delivered to man: our experience in indigenous varieties, such as Incrocio Manzoni 6.0.13, has allowed us to identify the correct strategy for obtaining this wine.

Tasting the 2018 vintage still in battonage, we understood that the correct way to take to keep its identity and essence unchanged, was to avoid stripping it of a dress that seemed made to measure. The desire to put the quality ahead to any other technical compromise has led us to bottle this wine non-stabilized unfiltered, with the aid of careful monitoring of all production processes. The result is an extremely intact and crunchy wine, which manages to fully convey the identity of the territory in which it has its roots.
